About Us
Docks Beers is an independent brewery and taproom located in Grimsby, North East Lincolnshire, known for its dedication to crafting accessible, high-quality beers. Our brewery is committed to pushing the boundaries of brewing while ensuring our space remains welcoming and inclusive to all.
Located above our brewery and taproom is Docks Academy, a dynamic and versatile cultural venue that opened its doors in March 2020. The Academy offers a flexible space accommodating up to 200 seated or 300 standing guests. It hosts a diverse and engaging programme, including live music performances, theatre productions, stand-up comedy, performing arts showcases, creative workshops, exhibitions and private events.
Docks Kitchen is a brand new street food outlet which will be based on the premises at Docks Beers and Docks Academy. Docks Kitchen will offer high quality, local food with rotating menus and is due to open in mid August.
About the Role
This is an exciting opportunity to play a key role in the future of a growing, ambitious independent business. As Head Brewer at Docks Beers, you will be responsible for planning, coordinating and overseeing all aspects of the brewing process. The successful candidate will play a key role in curating and creating exciting new beers, alongside the core Docks Beers range.
Key Responsibilities
Brewery Operations & Team Leadership
Oversee the brewing process from raw ingredients through to final packaging.
Ensure all staff receive timely training and ongoing development.
Monitor and maintain high standards of work across all Docks Beers production sites.
Raw Material & Supplier Management
Order and manage stocks of hops, yeast, malt and other brewing ingredients.
Ensure all materials meet quality standards and supply chain risks are addressed.
Regularly review and source new suppliers to balance quality and value.
Monitor water quality and tailor profiles to beer styles.
Oversee yeast management, including counts, viability, cropping and storage.
Planning & Budget Control
Develop and manage budgets, monitor costs and maintain accurate stock and production records.
Work closely with the senior management team to plan production schedules and staff rotas.
Production Oversight & Optimisation
Manage the movement of beer through production stages, resolving issues related to raw materials, equipment or targets.
Apply scientific knowledge to monitor and adjust brewing conditions throughout the process.
Supervise fermentation tracking, quality checks, pH and temperature management.
Maintain comprehensive brewing records for consistency and compliance.
Collaborate with the QA team for ongoing product improvements.
Packaging Management
Oversee preparation of beer for packaging, including cellar management, centrifugation, carbonation and CO₂/DO/TPO monitoring.
Planning and executing packaging across small pack, cask and keg.
Continuously look for process and quality improvements.
Recipe Development & Innovation
Work with management to create seasonal and specialty beers, targeting specific markets when required.
Experiment with new brewing techniques and styles
Equipment & Maintenance
Ensure all equipment is well maintained and staff are trained in preventative care.
Organise servicing when needed and advise on upgrades to improve production.
Contribute to decisions on equipment purchases.
Compliance & Safety
Ensure all activities comply with relevant standards and certifications (e.g., COSHH, SALSA, Food Hygiene Level 2).
Conduct regular safety audits and maintain a safe working environment.
Champion continuous adherence to quality and health & safety regulations.
What We’re Looking For
• 5-10 years experience in the brewing industry
• At least 2 years experience in a senior production role
• Proven leadership experience in a brewery
• Deep understanding of modern brewing practices and quality control systems
• Experience with HACCP/ EHO and regulatory compliance in food/drink production
• Driving licence
• Strong organisational skills to manage stock levels, ingredients etc
• Experience managing budgets, cost control, ordering and minimising waste
• Collaborative mindset – keen to work with other teams within the business to ensure joined up management across the Docks businesses.
• Creative problem-solver – able to adapt quickly to challenges or changes in demand
• Positive, hands-on attitude – willing to jump on the line, help with clean-downs and lead by example
• Tech-savvy where needed, able to manage digital systems, stock software, etc.
