We’re excited to share two new arrivals to the Docks family as we get ready to launch Docks Kitchen later this summer.
Toby Jack joins as Head Chef of Docks Kitchen, bringing years of street food know-how, fine dining flair and serious flavour. If you’ve had a burger from Fork in the Road Street Food at Freeman Street Market, you’ve already tasted what he’s all about – scratch-made sauces, creative specials and next-level attention to detail. Before turning to kitchens,
Toby spent a decade in cruise ship hospitality (including six years as Cruise Director!), travelling the world and absorbing food cultures from Tokyo to Buenos Aires. Expect global influence, bold menus and proper good food.
He’ll be heading up the brand-new kitchen based in the old Mockingbird container on King Edward Street. We’ve made a big investment in the site and can’t wait to open the shutters and serve smashed burgers, loaded fries and more, all built to match your pint.
Also joining the crew is Ola Jakubus, our new Marketing and E-commerce Manager for Docks Beers, Docks Kitchen and Docks Academy. Originally from Kraków, Ola’s called Grimsby home for the last eight years. She brings a heap of experience in digital marketing, events, SEO and e-commerce from roles in education, food wholesale, and manufacturing – most recently leading the digital strategy at Bradbury Group.
Outside of work, she’s into illustrating, surfing, and (like many of us at Docks) used to be in a band. We’re already loving the creative spark she’s bringing to the table.
